Vietnamese veggie summer rolls



“Gỏi cuốn” (pronounced ‘goy coon’) in Vietnamese - are a fun, fresh tasting, colourful way to eat more veg and experience a taste of Vietnam! These summer rolls originate from South Vietnam where they are served fresh, not fried, and at room temperature making them the ideal thing to eat during the sticky summer months! This box is a collaboration with our partner and leading Vietnamese restaurant Pho who guide us through this super hands on recipe. We can’t wait to see how children react as they learn how to transform brittle sheets of rice paper straight out the packet into something soft, strong and easy to roll around fresh and yummy fillings! This recipe will be available every week throughout July - let’s hope the summer weather is here to stay too!

Ingredients include: rice papers, rice noodles, lettuce, fresh herbs, fresh veg (carrots, peppers, radish, sweetcorn), pickling mixture, soy and honey.
